Tuesday Tastings; Homemade Hot Pockets

 

These homemade hot pockets are a taste of childhood. Fluffy, flaky baked dough pockets are stuffed with mozzarella cheese, pepperoni, and pizza sauce.

Serves 4

Ingredients

  • 1 package frozen puff pastry dough, thawed
  • ¾ cup pizza sauce
  • 1 cup mozzarella cheese, shredded and tossed with 1 teaspoon cornstarch
  • ½ cup pepperoni, sliced
  • 1 egg, beaten and mixed with 2 teaspoons of water
  • 2 teaspoons Italian seasoning
  • 2 tablespoons parmesan cheese, shredded
  • Pizza sauce
  • Chopped basil

Instructions:

  1. Preheat oven to 400°F. Place puff pastry on a floured surface and roll out. Cut dough into 8 even rectangles, and place 4 on a slightly greased cookie sheet (reserving the remaining 4 rectangles for the tops).
  2. Spoon pizza sauce evenly onto each rectangle, and top with mozzarella and pepperoni. Brush the edges with egg wash, and top with reserved dough. Press and seal the edges. 
  3. Brush the tops with remaining egg wash, and sprinkle with Italian seasoning and Parmesan cheese. Bake for 15–20 minutes or until pockets are golden brown. Let rest for 2 minutes before serving. Serve with pizza sauce for dipping, and garnish with chopped basil.
